"ROY-AL" Caramel Corn


One of Belinda's favorite taste-treats of the fall is home-made caramel corn: Yummy! Two dear people in McCamey gave her not only a bag of this delicious concoction, but also their very special recipe: Yea! Their names are ROY and ALice, hence the name of the recipe. Thanks so much, you two, for such a lovely gift!

ROY-AL Caramel Corn:
In a paper bag, combine 3 quarts of popped corn and 1 1/2 cups of peanuts. In microwave-safe bowl, combine the following: 1 cup brown sugar, 1/2 cup oleo, 1/4 cup corn syrup, 1/2 tsp. salt. Microwave 3 to 4 minutes, stirring after each minute... until it comes to a boil. Microwave 2 minutes more. Stir in 1/2 tsp. baking soda. Pour over popcorn and peanuts in the paper bag. SHAKE WELL. Microwave 1 1/2 minutes. SHAKE WELL. Microwave another 1 1/2 minutes. Pour into roasting pan (9"x13" pan) ... to cool. Stir occasionally.
